Ingredients:
2 tbsp butter
1 cup cremini mushrooms, sliced
1½ lb firm tofu, pressed and crumbled
2 tsp sugar-free maple syrup
1 tsp garlic powder
1 tsp onion powder
2 tbsp chopped fresh scallions
4 lettuce leaves for serving
Instructions
Set the IP in Sauté mode and adjust to Medium heat.
Melt the butter in the inner pot and cook in the mushrooms and tofu until softened and brown, 5 to 7 minutes.
Stir in the maple syrup, garlic powder, onion powder, and scallions. Cook for 1 minute and mix in the cheddar cheese.
Serve the mushrooms in the lettuce leaves.
