Avocado Carbonara

Ingredients:
2 tbsp butter
4 large zucchinis, spiralized
1 large ripe avocado, halved, pitted and pulp extracted
1 ¾ cups coconut cream
1 tsp freshly pureed onion
Salt and black pepper to taste
1 cup grated Parmesan cheese
Instructions

Set the IP in Sauté mode and adjust to Medium heat.

Melt the butter in the inner pot and cook in the zucchinis until tender, 3 minutes.

Meanwhile, add the avocado, heavy cream, and onion to a blender, and puree. Stir the mixture into the zoodles and season with salt and black pepper.

Dish the food and top with the Parmesan cheese.
