Simple Tomato Pork Soup








Prep
Ingredients:
1 lb. ground pork
Salt and black pepper to taste
1/2 tsp chili powder
1 tsp cumin powder
1 tsp coriander powder
1 tbsp olive oil
1 white onion, thinly sliced
½ bunch parsley, leaves chopped
1 ½ cups chicken broth
1 cup chopped tomatoes
1 lemon, juiced
Instructions

Place the pork in a medium bowl and season with salt, black pepper, chili powder, cumin powder, and coriander powder.

Set the IP in Sauté mode and adjust to Medium heat.

Heat the olive oil in the inner pot and cook the pork until brown, 5 minutes.

Add the onion, parsley and cook until softened, 3 minutes.

Pour in chicken broth, tomatoes, and stir.

Lock the lid in place; set in Manual mode on High Pressure and set the timer to 10 minutes.

After cooking, perform a quick pressure release to let out the steam, and open the lid.

Stir in the lemon juice and adjust the taste with salt and black pepper.

Dish the soup and serve warm.
